Anthony’s no salt beef and carrots ragù seasoned with cumin paprika and parsley

Deliciousness without salt. Cumin and paprika work together to bring a warm and earthy depth to this ragù. The carrots paired with the onions balance the tomatoes and bring out the sweet undertones of the beef, while the parsley and the oregano give it fresh and vibrant flavor. You can serve on pasta or rice, but you should definitely try it with spaghetti squash or cauliflower rice.

Anthony, dad and grandpa to us, or Pappous as we used to call him, while he was on a strict no-sodium diet, he began experimenting with ingredients that would make flavorsome dishes without using salt. His aim with this ragù was to create his favorite bolognese sauce. He definitely succeeded, no one ever notices that the dish contains no salt. Over the years it has become one of the most requested dishes in our family.

  1. Heat a large skillet. Add the oil and the pepper. Lower the heat to medium-high.
  2. Add the the ground beef, using a wooden spatula or spoon to, break it up into small pieces, stirring frequently while it browns. After a minute add the cumin and the paprika. Cook for 8-10 minutes until it starts to crisp and it turns dark golden brown.
  3. Add the garlic stir a few times add the onions, if you are using salt, add it at this point, mix everything well and stir for a couple of minutes, add the carrots, mix well and cook for about 10 minutes stirring often, if it starts to dry up add around ⅓ of the can of lager.
  4. Add the tomato puree and stir for 1 minute mixing in thoroughly. Pour in the rest of the lager if you haven't already drunk it. Once it starts to boil lower the heat to low and simmer for 15-20 minutes until the sauce is left with just its oil. Sprinkle the oregano and mix it in well and cook for a minute. Scatter the rest of the parsley and stir for 30 seconds and take it off the heat.
  5. We usually serve over rice, pasta or spaghetti squash.
