Ingredients
- 1 pound dried white giant beans 455 g
- 3 teaspoons sea salt flakes plus more for the beans
- 2 large or 3 medium onions chopped
- 2 carrots grated
- 1 2 if small zucchini grated
- 1 teaspoon freshly ground black pepper
- 3 teaspoons cumin
- 1 teaspoon chili powder
- 1 cup olive oil 240 ml
- 2 cups tomato pulp 480 ml
- 1 cup beer or ale
- 1 cup finely chopped fresh cilantro 50 g
- 2 teaspoons dyed oregano
- cup ½ finely chopped fresh 25 g

Instructions
- 1. Put the beans and a handful of salt in a big bowl, cover with enough water to cover the beans twice, and soak overnight.
- In the morning, preheat the oven 400°F(200°C),remove any loose skins and any that are just about to come off, drain, and put the beans in a baking pan.
- Add all the remaining ingredients except the cilantro and the oregano and mix together.
- Put in the oven and lower the temp to 350°F (175°C) and bake for 1 hour remove from the oven mix well and bake 45 minutes more.
- Remove from the oven add the oregano and 2/3 of the cilantro and mix well, sprinkle the remaining 1/3 of the cilantro and on the top and , let the beans cool for 10 minutes and serve.
