Smoked Trout Wilted Lettuce Garden Salad Recipe
This salad is about surprises from flavors and textures. There is the crunch from the kohlrabi the softness of the trout the velvety of the wielded lettuce and in between you have capers scallions purslane and arugula and if that wasn’t enough the dill and the lime play around withe smokiness of the trout.

Ingredients
For the salad
  • 1head lettucewhole leaves long ones torn in half
  • 135g kohlrabi1 cup peeled and sliced in thin slices (2-3 kohlrabies.)
  • 150g arugulababy whole leaves
  • 80g purslane1 cup major stems removed
  • 30g dillfinely chopped (1 small size bunch.)
  • 100g scallions1 cup sliced in thin slices
  • 200g smoked trout filletscut in 1/2 inch squares
For the dressing
Instructions
  1. In a salad bowl toss the lettuce the trout and 1/4 of the lime juice. Let it stand for 30 minutes tossing periodically. The salt from the trout and the lime juice will start wilting the lettuce.
  2. Add in the rest of the salad ingredients and toss. Drizzle over with the olive oil and the rest of the lime juice sprinkle fresh ground black pepper and serve.
