Mushroom Spinach Penne Seasoned with garlic, black pepper and thyme
An exquisite very easy, very light pasta dish. Seasoned with garlic, black pepper, thyme, oregano, sumac and sesame seeds the soft spinach and the crisp mushrooms blend with these ancient eastern Mediterranean spices in a symphony of earthy savory and citrus flavors. For a strict vegetarian and vegan sprinkle with some extra sesame seeds and sumac instead of parmesan cheese.

  1. Heat a large pan. Add the oil and the pepper lower the heat to medium-high.
  2. Add the garlic stir a few times add the mushrooms using a wooden spoon toss them with the garlic and oil, add the salt, keep tossing and and stirring for about 6-8 of minutes, till the edges starting to get crisp.
  3. Add the spinach and toss with everything cover the pan and cook for about 2 minutes, uncover turn the heat on high and stirring sauté 1-2 minutes until the spinach is just wilted and tender.
