Harissa is an ancient North African spice mix rooted in aromatic Mediterranean herbs and rose petals which, much like other similar spice mixes in the region, evolved after the arrival of chilies from the Americas and became a fiery blend, one that we happen to love.

Ingredients
- 115 ml extra virgin olive oil
- 3/4 tsp pepper white fresh ground
- 3/4 tsp harissa spice mix (see recipe)
- 1 tbsp garlic crushed 3 cloves
- 1 onion thin sliced 160g
- 1 tsp sea salt coarse unrefined, or Kosher
- 500 g cabbage thin sliced
- 500 g egg noodles (you will need 1 tbsp of salt and 1 tbsp of olive oil for the egg noodles)

Instructions
- Put a pot of water to boil for the egg noodles.
- Add the sliced cabbage and stir continuously for 2-3 minutes, and then turn the heat to low. Stir periodically and continue to cook on low heat. The cabbage should be well coated with spices and pepper. After around 15 minutes, the cabbage should start to caramelize and the sauce should be ready.
- Check your water, it should be boiling by now. Add in 1 tbsp salt, 1 tbsp olive oil and the egg noodles. Cook according to the instructions on the package. Drain and divide the egg noodles in 4 deep plates top the with the caramelized cabbage.
